A gaff drives a hook into the fish's body, so it is a tool for one moment: a legal fish you have already decided to keep, beside the boat. Everything else about choosing one follows: hook gap for the species, handle length for your rail, and a hook that survives salt. And some fish can never be gaffed.

Fish you can't gaff
Start here, because the law decides before the tackle does.
Snook. Florida's snook gear rule, 68B-21.006, allows hook and line only and says a person "may not harvest or attempt to harvest a snook by spearing the snook or using any device designed or intended to impale or hook the snook by any part of its body other than its mouth." A gaff is that device.
Tarpon. Florida's tarpon page says tarpon over 40 inches "MUST remain in the water" unless you hold a tarpon tag for a record. Harvest without a tag is barred, so there is no fish to gaff.
Prohibited sharks. FWC's shark rules say prohibited species "must remain in the water with the gills submerged" and tell anglers: "NEVER bring a large shark onto a fishing vessel, a pier or bridge or onto dry land beyond the surf zone unless you plan to harvest it."
Federal highly migratory species. Under 50 CFR 635.21, an Atlantic HMS "that is not retained must be released in a manner that will ensure maximum probability of survival, but without removing the fish from the water." A billfish you don't keep must be released "by cutting the line near the hook or by using a dehooking device," again in the water.
Then the size limit. If a fish may be short, don't gaff it to find out. Bring it to a rubber landing net, check it against a measuring board, and release it if it's under the limit.
Hook gap: match it to the fish
The gap is the distance from the point to the shaft, and makers size it by species.
Fishscale Gaff Co's listing gives the clearest chart we found. It puts a 2.50 in gap on bluefish, sierra mackerel and barracuda; 2.75 in on striped bass, smaller grouper and snapper; 3.00 in on cobia, tuna, wahoo and amberjack; 3.25 in on king mackerel and smaller sharks; and 4.00 in on large tuna, swordfish and marlin.
TRHUNTER sells its carbon gaffs by hook size, 3 in and 4 in, without a gap figure. Use the Fishscale chart as a reference and measure a hook you can see in person.
Handle length and flying gaffs
Handle length follows the distance from where you stand to the water. A 3 ft gaff suits a skiff or a bay boat with a low rail. Center consoles and sportfishers with higher gunwales are where the 4 ft 8 in TRHUNTER and 54 in Gaffer earn their reach. The SANLIKE collapses to 17.3 in, which matters in a small console.
A flying gaff has a head that comes off the handle and stays tied to a rope. We found none from a trusted seller on Amazon. If you fish tournaments, the IGFA rules cap gaffs, flying gaffs included, at 8 feet overall. They also limit a flying gaff's rope to 30 feet. The length limit doesn't apply from a bridge, pier or other high structure.
Hooks, shafts and salt
Stainless or coated steel is the choice that decides your rinse routine. The TRHUNTER hooks are S316 stainless, which the maker says resist the marine environment. Fishscale's standard hook is Mustad carbon steel with a Duratin finish plus a ceramic coat; the maker offers 316 stainless for a gaff that "stays full time outdoors in a marine layer."

Gaffs we left out
AFTCO gaffs were offered only by resellers such as Big Dog Tackle and Tackle World, not AFTCO's own store. The BLUEWING fiberglass gaff was sold by "Uniprime Outdoors," and the Fiblink gaffs by "buyertrend," neither in the brand's name. A stainless flying gaff head was listed, but not by a trusted seller.

Frequently Asked Questions
Can I gaff a shark I plan to release?
No. Federal rules for Atlantic HMS require release "without removing the fish from the water," and Florida requires prohibited sharks to stay in the water with the gills submerged. Cut the leader close to the hook or use a dehooker.
Can a record fish be taken with a two-hook gaff or a harpoon?
Not under IGFA rules. The IGFA says "only a single hook is permitted on any gaff" and "harpoons or lances are prohibited."
What should I use from a high pier for a fish I'll release?
A pier net or sling, not a gaff. FWC's fish handling page says to target fish from bridges or piers only with gear that can "support their entire body."
Does the gaff count toward IGFA's length limit if I'm on a pier?
No. IGFA says its 8 ft limit "does not apply when fishing from a bridge, pier or other high stationary structure."
